Not only is this a tried and tested veggie winner, it’s also easily converted to a vegan recipe, and you can freeze the leftovers for up to two months. Pop a roast potato in that Boxing Day leftovers sandwich, you deserve it.

So what could be better than sitting down at the dinner table while the wind howls outside and it’s dark by 4pm, and having a little parcel of joy pop up on your plate?
